As someone who's worked with LN2, I just want to say that this is probably actually possible, though it would probably take about a jug of the stuff, poured on slowly over a period of a couple of minutes.
The problem would occur when it thawed... seconds later.
That problem would be pain. Huge amounts of it.
The best bet would be complete amputation the second it began to thaw.
But of course, that's what you're looking for, so all would be well.
